Note: I've been trying to find a decisive answer on soy flour and what phase, and from what I can tell it is OK for phase 2. If this is wrong someone please correct me!
Soy Flour Pancakes
1 cup soy flour
1 tsp baking powder
1 egg or equivalent sub
1 tbs canola oil
1/2 tsp salt
1 cup milk
Cinnamon, vanilla, nutmeg, and sugar sub to taste
Whisk all ingredients together and cook as you would regular pancakes, 1/4 cup of batter at a time.
Makes about 7 3-inch pancakes.
On the first test I used the same amount of spices I'd use for regular pancakes, and they tasted a little sour. The soy flavor masks the other flavors a lot so be prepared to use more if needed! I used a LOT of cinnamon because I love it, but you could probably use anything you like :)

7.9 g protein
4.2 g fat (using Smart Balance oil and 1% milk)
